Why do the fruits turn brown in color?

Not every fruit but most of the fruits when left cut turns brown. Especially fruits like apple, banana, pear, avocado, artichokes, and potatoes are easily prone to discoloration. When these fruits are exposed to air, they turn brown. The basic science runs behind this discoloration of fruits. After quick exposure to air, a reaction takes place between enzymes present in fruits and the air around you.

When fruit is cut, the cells present in it get affected and release an enzyme called polyphenol oxidase. Polyphenol oxidase then reacts with the air as well as with other enzymes present in the fruit to cause a change in color or discoloration. In some cases, these enzymes may end up making fruits tasteless.

Squeeze lemon to ensure you get 1 tablespoon juice out of it and add the juice in 1 cup of water. You can substitute lemon juice with other citrus fruits like pineapple, or orange for obtaining a different flavor.
